Crunchy Peanut Butter Ice Cream Bars

Softened vanilla ice cream

24 oz.

48 oz.

72 oz.

Non-dairy whipped topping

2 C.

4 C.

6 C.

8 C.

10 C.

12 C.

Crunchy peanut butter

1/2 C.

1 C.

1-1/2 C.

2 C.

2-1/2 C.

3 C.

Chocolate pudding mix*

2 boxes

4 boxes

6 boxes

8 boxes

10 boxes

12 boxes

Grape Nuts cereal

6 oz.

12 oz.

18 oz.

24 oz.

30 oz.

36 oz.

*= Use the 4 serving size boxes of pudding, and do NOT make the pudding.  Use the dry powder in the recipe. 

 

Assembly Directions:

In a large bowl, mix together the ice cream, whipped topping, peanut butter and dry pudding mix.  Beat or stir until evenly combined.  Using a spoon, fold in the Grape Nuts cereal. 

 

Freezing Directions:

Spread dessert in a 9”x13” pan.  Seal, label and freeze.

OR

Dump dessert into a rigid plastic container.  Seal, label and freeze.

OR

Put foil cupcake liners on a cookie sheet.  Scoop the dessert into the foil liners, for individual servings.  Put the sheet into the freezer until the dessert is frozen.  Remove the tray from the freezer, and put the foil liners in a gallon freezer bag.  Seal, label and freeze.  

 

Serving Directions:

Allow dessert to thaw slightly.  Cut into squares and serve.

OR

Use an ice cream scoop to serve the dessert into bowls.

OR

Remove the needed number of foil cups from the freezer.  Allow to thaw slightly and serve.

 

Comments:

This is an easy dessert that will be enjoyed by kids and adults alike.  Use low fat and/or sugar free ingredients to make a “healthier” dessert.

Per Serving: 162 Calories; 7g Fat (38.0% calories from fat); 3g Protein; 23g Carbohydrate; 1g Dietary Fiber; 13mg Cholesterol; 126mg Sodium.

Exchanges: 1-1/2 Fat; 1 Other Carbohydrates.

 

Nutritional Info: Frozen Snickers - Lite

Replaced ice cream with low fat ice cream, Cool Whip with Cool Whip Lite, and sugar pudding mix with sugar-free fat-free pudding mix.

Per Serving: 122 Calories; 5g Fat (33.7% calories from fat); 3g Protein; 17g Carbohydrate; 1g Dietary Fiber; 4mg Cholesterol; 204mg Sodium.

Exchanges: 1/2 Fat; 1/2 Other Carbohydrates.
