Back To School Mega Session

School is just around the corner here (19 days away!), and I did a mega session to fill the freezer with quick and healthy lunch options. Wanted to add some variety this year - sandwiches get old - for two kids, and my DH and I, who also pack daily lunches.
I did a Beef and Chicken Plan. All recipes are from 30daygourmet ebooks, manual and the website. Planned last weekend, shopped on Tuesday, started prep work on Wednesday and am about half way thru my list (I work full time - so am doing this after hours). Will finish up this weekend with the baking.
Anyone else stocking up for back-to-school lunches?
Beef Items
1. French Dip
2. Stuffed Pepper Soup (uses HB)
3. Crock Pot Italian Beef
4. Taco Rice

Thanks for all of the ideas! You must have been cooking all day! Could I have the recipes for the orange tapioca salad and the Henny Penny cookies? I have two young kids and thought your idea of several kinds of soups was excellent.

Way to go!!!!!!!!!! I'm jealous!!! I need to get some "real" food in the freezer. = ) I tried a new way to get some fresh cinnamon rolls in the freezer today, and will let everyone know how that goes after thawing and baking. = ) Also made a peach pie, to see if we like the 'recipe' for the filling... if so, I've got 1/2 bushel of white peaches to get sliced and in sugar + whatever else we decide we like in our pie filling and get them in the freezer. We will really appreciate fresh pie over the winter!!! = )

WOW!! Congratulations, you are an inspiration to get organized. This lot should keep you going for quite a while. It's such a good idea to make the breads etc. They will be so handy for your lunches. Can you tell me where to find the Raisin Bran Muffins recipe? Thanks, Rebekah

Bryant04, You can find the Orange Tapioca Salad recipe by clicking on the Recipes button in the upper right hand corner of the screen. Choose the "Type" of Sides and Salads. You will see the recipe in the list. I believe the Henny Penny cookies are the Stovetop Cereal Cookies from the 3rd edition of the manual. The recipe is available in the Members section of the web site. Click the Members button above and login with the user name and password found in your manual. Enjoy!

Thanks all! Yes, all of the recipes were from www.30daygourmet.com; and the wonderful ebooks that I purchased here. I use the Advantage cooking software to keep me organized - the shopping lists are wonderful...they save me sooo much time!! I'm still cooking & filling the freezer - will be zucchini bread tonight, corn dog bites and baked hot dogs. The baked hot dog recipe is a Southern Living one - I'll post it. It is a good one -- really makes hot dogs aka 'tube steak according to my DH' worth eating! LOL!!

Baked Hot Dogs * 3/4 cup chopped onion * 3 tablespoons butter * 1-1/2 cups chopped celery * 1-1/2 cups ketchup * 3/4 cup water * 1/3 cup lemon juice * 3 tablespoons brown sugar * 3 tablespoons white vinegar * 1 tablespoon Worcestershire sauce * 1 tablespoon yellow mustard * 2 packages (1 pound each) hot dogs * 20 hot dog buns, split DIRECTIONS In a saucepan over medium heat, saute onion in butter until tender. Add celery, ketchup, water, lemon juice, sugar, vinegar, Worcestershire sauce and mustard; bring to a boil. Reduce heat; cover and simmer for 30 minutes. Cut three 1/4-in. deep slit on each side of the hot dogs; place in a 2-1/2-qt. baking dish. Pour the sauce over the hot dogs. Cover and bake at 350° for 40-45 minutes or until heated through. Serve on buns. Yield: 20 servings. I freeze these after baking; thaw and reheat in a covered microwave safe dish.

Rebekah - BUY the co-op cooking book...it's one of my favorites! I happen to belong to a local freezer cooking group but I find that I am using the recipes more and more for just our family. You won't be disappointed with it!

I just read the September newsletter about Nancy's Back to School cooking day. I too waited until the last minute to stock up on freezer meals. I am so glad I took the time to put meals away. This is what I made ; 1. 1 batch of Master meat mix= 10 patties and 37 meatballs 2. Onion Burgers= 9 burgers 3. Mexican Pork Chops = 2 meals 4. Sausage Rice Bake= 1 meal 5. Ziploc Chicken= 2 meals 6. Spaghetti Sauce= 4/ 2 cup servings and 1/1 cup serving 7. Tara's Marinade on boneless chicken breasts= 2 meals I worked about 3 1/2 hours. I ended up with about 20 meals. It has definitley been worth it. Not only was I prepared for the beginning of the school year I was prepared for a surprise! Two weeks into the school year, we started to remodel our kitchen. We weren't expecting to start so soon but our builder was available. He has thoughtfully left me with a working stove so I have been using up my freezer meals. My next cooking session will be in my newly remodeled kitchen!

The newsletter said your apple Bread recipe was from the Cooking Manual, but I only saw a recipe for Apple Squares in the book. Did you modify that recipe to make bread? Thanks, Rhea

Yes, it is the apple bars recipe. We called it bread...but you are right it is the same recipe as the one in the book.
