Spaghetti Pie - how much frozen spinach?
Infopab
Topic Started Saturday, February 11, 2012

In the spaghetti pie recipe it calls for 5 oz of frozen chopped spinach. Does a 10 oz pkg of frozen spinach egual 5 oz after thawing and squeezing out the water?
Also my family dislikes cooked tomatoes and the recipe and other recipes call for canned diced tomatoes. Is there substitute you can suggest that would work just as well?

Take a 10 oz. package of frozen spinach break it in half. Defrost it and drain it according to the instructions. If you are making 2 recipes, you would use a whole 10 oz. package. For the cooked tomatoes - what don't they like about cooked diced tomatoes? If it's the "chunks" of tomatoes in the meal, you can try substituting crushed tomatoes instead. My son prefers recipes made this way. Or you could crush the tomatoes youself. Take the canned diced tomatoes and process them for a few seconds in the food processor to break up the chunks.
