Easy Freezer Monte Cristo Sandwiches

Swiss cheese, sandwich-size slices

Assembly Directions:
Lay 8 pieces of French toast on the counter. Top each piece with 2 slices of ham, 1 slice of Swiss cheese and 1 slice of turkey breast. Top with remaining pieces of French toast.

Freezing Directions:
Wrap each sandwich individually, either in a sandwich baggie or plastic wrap. Put all of the wrapped sandwiches in a freezer bag. Seal, label and freeze.

 

Serving Directions:
Remove the needed number of sandwiches from the freezer. Thaw at least overnight in the refrigerator. To heat, unwrap each sandwich, cut it in half diagonally, and put it on a hot griddle or skillet. Heat for 5-10 minutes, until heated through and the cheese starts to melt. Flip the sandwich about halfway through the cooking time to help it heat evenly. Serve warm with your choice of condiments.

 

Tammy’s Comments:
Traditionally, Monte Cristo sandwiches are batter dipped, fried, dusted with powdered sugar and served with fruit jam for dipping. Using French toast, especially if it’s cooked with minimal grease in a non-stick skillet, should be a healthier alternative to deep-frying. The mix of flavors is good enough that you really don’t need any condiments. But to me, a sandwich isn’t a sandwich without Miracle Whip! I add some after I take the sandwich off the griddle. You could also add lettuce, tomato or pickles if you like.

If this is something your kids won’t eat, flash freeze the French toast, and then put it in a freezer bag in the freezer. Keep the meat and cheese on hand. To serve, thaw the desired number of slices of French toast. Heat and serve the kids traditional French Toast, while the adults add the meat and cheese for a Monte Cristo sandwich. Then everybody is happy, and you’re basically fixing one meal!
