Fresh Lemonade Concentrate

| Sugar |
1-1/2 C. |
3 C. |
4-1/2 C. |

7-1/2 C. |

| Water |

| Freshly squeezed lemon juice |
1-1/2 C. |
3 C. |
4-1/2 C. |

Assembly Directions:
In a saucepan, stir together the sugar and water.
Cook until it boils, and the sugar is dissolved.
Remove from heat and allow to cool. When the mixture
is cool, stir in the freshly squeezed lemon juice.
Freezing Directions:
Put the concentrate in a rigid container or freezer
bag. Seal, label and freeze.
Serving Directions:
Thaw the concentrate. Add it to a pitcher, with 5 C.
of cold water. Add ice and stir to mix. If desired,
garnish with lemon slices and fresh mint.
OR
To serve by the glass… thaw the concentrate. Combine
1/3 C. of concentrate with 1/4 C. cold water. Stir
and add lots of ice. Garnish with a fresh lemon
wedge, if desired.

Another refreshing use for this Lemonade
Concentrate... add some to fresh brewed SunTea!

To get the most juice from lemons:
Keep them at room temperature
Right before juicing, place them on countertop and roll them back and forth with hands applying light pressure.
If you have any that are just not ripe enough to give up all their juice, microwave them for 10-30 seconds.
