These are great to pull out for drop-in company and taste great at breakfast time, too! Other fruits such as blueberries, drained pineapple, and sweet cherries may be substituted for the apples. We have tried this using Egg Beaters to replace the eggs and apricot puree or applesauce to replace all of the oil. Tasted great! If only a few of you like nuts, sprinkle the nuts over only 1/2 of the pan of batter before baking.

Assembly Directions:
Stir together flour, baking soda, cinnamon, and salt. In another bowl, beat together oil, sugar, eggs, and vanilla. Add dry ingredients to liquid, beating well. Stir in apples and nuts (optional). Pour into spray-treated or greased 15 1/2 x 10 1/2 x 1 cookie sheet or jellyroll pan. Bake at 350 degrees for about 30 minutes or until browned. Cool in pan. Mix all frosting ingredients together until smooth. Drizzle frosting over bars.

Freezing Directions:
Cut into squares. Label and freeze in rigid containers. Use waxed paper between layers

Serving Directions:
Thaw and enjoy.
