Assembly Directions:
Place 1 cup of white sauce in the bottom of 9” round dishes or 9×13 pan and spread to moisten the bottom layer. Tear or cut
tortillas into strips for 9×13 or square pans. For round pans, tortillas may be left whole. Place 1/2 the tortilla strips or 1 whole
tortilla into the bottom of the pan. Layer 1/2 the chicken on the tortillas. Pour 1/2 the sauce over the chicken. Repeat the layers, ending with sauce. Sprinkle cheese over top.

Freezing Directions:
Wrap tightly with freezer paper, foil, or place in 2-gallon ziptop bag. (An 8” or 9” pie pan will fit in a 1-gallon freezer bag.) Seal, label and freeze.

Serving Directions:
Thaw and bake at 350 degrees for 20-30 minutes. If this recipe is frozen in a metal or rigid plastic container, it can be popped out frozen and placed in a glass or microwave safe pan and thawed in the microwave 20 minutes, then baked in the oven. If you do this, you may want to put the cheese in a separate small freezer bag (for obvious reasons!). To bake from the frozen stage, add 10-15 minutes extra baking time.

Options:
*Enchiladas: 1/3 of the white sauce may be stirred into the chicken and used as a filling to roll enchiladas. Spread
1/4-1/3 C. chicken/sauce mixture in each tortilla and roll up. Place each roll seam side down in a spray-treated or greased pan. Top with remaining sauce, then sprinkle on the cheese. Bake as directed above. OR, freeze the chicken and sauce together. Thaw, warm and serve over potatoes, rice, biscuits, or pasta. Yummy! OR, stir 2 T. of taco seasoning mix per recipe into the white sauce
for more south-of-the-border flavor.
