NEWS FROM THE ROAD
I was in the car heading to do some volunteer work at my church when I heard the news on the radio. Like many others, I thought that I had tuned into a remake of “War of the Worlds”. As the reality sunk in, I headed back home and watched and prayed all day as the horrors of what was happening in our country unfolded. In the days following, it has been difficult to think about the mundane tasks of life, such as cooking, in quite the same way. For those of you who were touched in a personal way by this tragedy, I extend my sympathies. For those of us who did not lose a loved one, we grapple for things that we can do to make a difference. Our attempts seem feeble in light of the enormity of this disaster but every little act of kindness added together is making a huge impact, isn’t it?
And so I encourage you to do whatever you can in whatever way that you can. For me, it meant a few things. They are based in New York City and have been helping since the afternoon of September 11th and plan to be there for several months.
DO WHAT YOU CAN – GIVE BLOOD Last week I donated blood to the Indiana Blood Center. I’m not as patient as the people who waited at our blood centers for hours and hours in the days after the attack. I figure that they will be needing blood for a long, long time so I waited and walked right in. Jenna loved roaming around the big trailer and the staff was great about letting me get a picture.

DO WHAT YOU CAN – GIVE FOOD On the way back home from the Bloodmobile, Jenna and I had a bunch of fun stopping by our local Fire Station. We left two chocolate cream pies for our firefighters. They were surprised to hear that the recipe had come from a friend of mine who works with them. Check out Fireman Dan’s Chocolate Cream Pie in the Bonus Recipes. It’s a keeper!

here to see 4 Avon, Indiana firemen and 2 pies> In the weeks since the terrorist attacks, I have heard several people writing and talking about how much Americans are craving “comfort foods” in this stressful time. So I’m devoting this newsletter to some of our favorite fall foods – chili, soups, apple crisp, and chocolate chip cookies. I feel better already. Funny how running out of freezer food can make you feel desperate. That’s how I felt last week after a few nights of popcorn and cereal dinners so I hastily grabbed the store ads, did some quick planning, made a midnight run to WalMart, and had a cooking day. Cooking alone was something that I had never tried before but I figure that if at least half of you cook that way, I’d better know what it feels like. <Click

BONUS RECIPESThose crisp, cool days of fall are beginning to arrive in central Indiana. Our leaves are coming down, the heat is kicking on at night and Adam keeps saying “you gotta buy me a coat, mom!” I love summer but I’m always ready for fall and those “warm and cozy” comfort foods. I visited a favorite site of mine recently and asked the owner, Stephanie Manley, if I could share some of her recipes with you. The site is www.copykat.com and is full of great restaurant recipes. Get a cup of hot chocolate and take a look around her site. You’ll love it! Taste of Wisconsin’s Three Cheese Broccoli Soup reminded me of the trip Tara and I took last fall to the Wisconsin Dells to teach a few seminars. We took a boat tour of the Dells and had a great time. We also took home some Wisconsin cheese. This recipe uses LOTS of it and it is good!

here for the Three Cheese Broccoli Soup recipe> Wendy’s Chili is a favorite of many. Since I didn’t have a chili recipe of my own (I know – that’s pitiful) I decided to give this a try. I don’t do spicy and the real Wendy’s Chili is actually too zippy for me. Making it myself gave me control over those spices (I left them in the recipe. You can decide for yourself.) I loved the outcome. Served with warm, homemade bread you just can’t beat it.

here for Beefy Vegetable Soup recipe> FIREMAN DAN’S CHOCOLATE CREAM PIE I can’t think of a better comfort food than chocolate, can you? Wouldn’t it be great to know that you have a stack of chocolate pies in the freezer that you can pull out on a moment’s notice to offer company, take to a sick friend, or share with your local firemen or police force. This pie has a chocolate crumb crust and 4 Hershey bars in it. What could be better? Thanks to my friend, Dan Smith, who shared this recipe many years ago when he was featured in our local newspaper (our Cheeseburger Quiche recipe is his, too).

here for Fireman Dan’s Chocolate Cream Pie> Another fall favorite is Apple Crisp. This recipe came from my friend, Becky almost 10 years ago. Jenna and I took a trip to our local apple orchard last week and had fun comparing all of the varieties. Apple filling for crisp or pie freezes great. Most of us would make these desserts more often if we didn’t have to make a trip out for the apples and then do all of that peeling and slicing. Buy them now while they’re cheap and put them in the freezer.

I’ve been introducing my four kids via their favorite treats. Last month you met Jenna and Adam our two youngest. This month you get to meet the teenagers (can’t wait, you say?). Frozen Peanut Butter Bars – There was no hesitation on 13 year old Becky’s part when I asked her for her favorite freezer food. She inhales these! Tara has been making these for as long as I can remember and we all just love them. If you love Reese’s Peanut Butter cups, you’ll love these. <Click

<Click here for the Frozen Peanut Butter Bars recipe> Blender Shakes – Katy is 16 years old and attends Covenant Christian High School in Indianapolis. She’s at that age where they try skipping breakfast, studying through lunch and then coming home famished. We hit a compromise when she discovered these blender shakes. They’re great because she can make them up ahead of time and keep them in the freezer until she’s ready to head out the door. Much healthier than anything she would be getting at school. (She keeps the shake in the teachers’ refrigerator. Don’t ask me how.)

My family loved these. Bob and I had them with gravy and the kids opted for burger-style. I put the gravy packets right into the freezer bag with the patties so that I would be sure to have them come serving day!

I ran into a 30 Day Gourmet newbie in the parking lot at WalMart the other day. We spent our walk into the store (that can usually count for aerobics in our town) talking about her cooking day and how great it was. She shared a super idea for hot sandwiches with me. She and her daughter-in-law made up sloppy joe filling and had ham and cheese on hand. They bought buns and filled them with the sandwich fixin’s. Then they wrapped them in the individual foil sheets and froze them. 20-30 minutes (wrapped) in the oven and you’ve got a great sandwich. No worry about whether you have buns on hand and it’s easy to pull out just one or two. Thanks, Leslie!
