Fall has definitely come to Indiana! How do I know? The heat kicked on this morning and neither Bob nor I jumped up to turn it off (we’re frugal freaks!) It was COLD in the ole’ log home. This is the time of year when I feel truly sorry for those of you who live where the seasons don’t change. How can you live without seeing those beautiful trees? (I know. The beaches and warm air make up for ‘em huh?)

Once the cooler weather hits I always feel like eating different foods. The grill no longer has the same appeal. I want warm. I want simmering. I want bowls and mugs. So with Tammy’s help I’m devoting this issue to great fall foods – specifically crock pot recipes and fresh-from-the-harvest apple recipes.

We all know that we should use our crock pots more. Nothing beats coming home from a busy day to a house full of wonderful smells and a dinner that’s ready to serve. We’ve put together some great recipes and tips for you.

Another fall favorite of mine is apples. We have a great apple orchard just a few miles away and love to go there every fall to take a ride out to the pumpkin patch and then buy a variety of apples to take home. Of course, over the years we have lost our teenagers’ participation in this family activity. Something about riding on a hay wagon with your mom and dad when you are 17, 14 and 12 just doesn’t appeal to the older ones. But my baby Jenna is still loving it. At 9 years old she still loves to pick out a pumpkin, weigh it on the scale and take it home and carve it with her Daddy. Click here to see a pix of Jenna and her 2002 pumpkin. I also wanted you to have a brief explanation of the new banner ads that you see on the site. As many of you know, it costs a bunch of money to run a website like ours. We have over 750 pages on the site now (not counting the message boards). I want to keep the site free and open to all (except for those 50 recipes on the manual owners section) To do that, I need to pull in some revenues by partnering with other sites. It’s pretty simple. We show you their logo and link. If you click-over and buy something from them I get a small percentage of your sale. To give you an idea of the big bucks rolling in, I have made a whopping $125 in the last 9 months through this venture. I’m hoping with the new ads you’ll see some businesses that you would be frequenting anyway. You will only see companies that I have checked out and that I have purchased from myself. Crock Pot Recipes from Tammy
Everyone loves to use their crock pot… it makes the house smell great, and it makes a tasty meal for you without a lot of effort. What if you had the starts for some crock pot meals in your freezer? That would make it even easier for you! Plan to use the crock pot for days you have evening activities and help your dinner hour go even smoother! Haven’t used your crock pot much or have some basic questions? Click here to go to some Q&A’s from Rival. They have some great tips and info!

I tried a couple of tips from our message boards, with great success! Click here to read them.

Both of these tips are great, and you’ll probably say “Why didn’t I think of that?”, just like I did! I came up with a similar tip of my own. I have a round 6 quart crock pot. I found a plastic container in my cupboard that was the same shape as my crock, and just a size smaller, so it fits right inside the crock. Then I could put the meal for the crock pot in the plastic container and freeze it. Then when I want to cook or re-heat it, I just dip the plastic container in some hot water to loosen the contents, and it slides right out into the crock pot, ready to go. I also put the oven bag inside this container to freeze it. It seemed to take too long to get my crock pot and the contents to cool, so using this container seemed a better option.

Note: The most common sizes of crock pots seem to be 3 quart and 6 quart. On the following recipes I’ve tested, I put an approximate under the “Makes: “ column, so you know how full your crock pot will be. Or if you’ll need to divide it into 2 meals!

Hot Sausage Sandwiches
This family favorite is just like the sandwiches you buy at the county fair. Spicy and delicious! The sausage isn’t pre-cooked or in links… you buy it at the fresh meat counter in your grocery store.

Crock Pot Lasagna
Once you have the starter for this in the freezer, it only takes 2 hours to cook in the crock pot! And smells wonderful!

Apple Recipes from Nanci
Jenna and I chose a great day to visit the apple orchard and pumpkin patch last week. (Click here to see us). I know that having sliced apples frozen and ready to go will save me a bunch of money over the winter and give me lots more recipe choices. I bought a peck of apples for $5.97 and brought them right home and started on apple recipes. I got 36 C. out of a peck (.60 per cup) and here’s what I used them for:

6 C. used in Apple Dumplings
3 C. used in Apple Harvest Cake
1 C. used in Mom’s Oatmeal Apple Raisin Cookies
1 C. used in Apple Thumbprint Cookies
2 C. used in Pork Chops with Apple Gravy
8 C. used in Apple Pie Filling (2 pies)
9 C. vacuum packed and frozen in 3 C. portions
6 C. vacuum packed and frozen in 2 C. portions

Wish you knew how many cups of sliced, chopped apples there are in a peck or a 5 pound bag a large apple for that matter? Click here for a good equivalency chart to go by when cooking with apples.

How do you pick the right apple for the job? Click here for a great list of apples varieties and their uses. I printed off a copy and put it in my cooking note-book.

Wondering about freezing apples? Works great! You can even freeze them whole (I didn’t know that!). Click here for more info. The apples I chose will work fine for baking and in sauces. Thawed apple slices for a fresh fruit salad would require a firmer, crisper apple. I got out my handy dandy vacuum sealer and it did a nice job. Now I have ready-to-go apples in 2 and 3 Cup portions. Amazing how much that will help!

What new apple recipes did I come up with? Some really yummy ones, according to my friends and family. Funny how people seem to know when I’m testing recipes here. ☺

Pork Chops with Apple Gravy – Yum, yum. It tasted so good to eat pork chops covered with something besides barbecue sauce or marinade. Great flavor!

Mom’s Apple Oatmeal Raisin Cookies – I found this recipe in my Mom’s little red recipe box – all typed out on a 3x5 card. Did your moms do that too? These are really good!

Apple Dumplings – I had never tried making apple dumplings before. They sounded complicated but they’re really just little apple pies cooked with that yummy syrup over them. I froze some uncooked and also some cooked. Both were great!

Apple Harvest Cake – I found this recipe in a 20 year old church cookbook. Those ladies sure knew how to cook!


The cream cheese frosting is way too good but not at all necessary. Bob has been eating a piece every night with a vanilla ice cream on the side. I prefer it at breakfast!

Apple Thumbprint Cookies – I invented this recipe when another one I tried flopped. I couldn’t get the filling to stay inside the cookie so I finally just made an indention and put the filling on top. That’s when it reminded me of those thumbprint jam cookies my mom made every Christmas. The apple and butter taste is so good – and rich!

MESSAGE BOARD UPDATES FROM TAMMY


Happy Fall, everyone! I’m with Nanci… I love the changing colors on the trees! My kids are still young enough to enjoy trips to the pumpkin patch and apple orchard, so I get to enjoy them too. And I love the smell of fresh applesauce cooking in the crock pot!

The message boards were busy again last month… 217 new posts! We met a lot more 30 Day Gourmets through an “introduce yourself” thread. Click here to read it, and even introduce yourself!

We had an interesting post from a first timer… click here to read it. You’ll enjoy it whether you’ve ever had an assembly day or not!

Quite a few people shared new recipes. And someone even posted a “laugh for the day” for us. Click here for a chuckle!

Our webmaster has added a category to the message boards for you to contact Carol, author of “Freezer Lunches To Go” e-book. And he will be adding a new category any day now for the new software.

I’ve gotten a few questions recently by email from people wanting help finding a recipe on the boards. So I thought I’d take a minute and explain the search options we have on our site, so you can find what you need when you need it. We have recipes on the message boards and under the “Recipes” tab at the top of the site. These two areas are operated separately, so you’ll have to look under each using different methods.

On the message boards, once you’re on a page with topics, there will be a line of links at the top. They are: Home, FAQ’s, Search, Post New Topic, etc. If you click on the Search link, it will take you to a page asking for keywords. Type in the keyword you’re looking for. Hint: the more keywords you put in, the more threads you’re going to have to search through. I usually put in the least common keyword, and can find what I’m looking for faster. Under the keyword box, are three different places the system will look for your keyword(s). You can click Message Author, Topic, or Message Content. Message Content is already checked… you decide if you want the system to search the other two for you. Just click on the box to check or un-check them. Then click Begin Search. In a few seconds, the list of threads that match your keyword pop up on the screen. You just have to read through them to find what you’re looking for.

When you click on the “Recipes” tab at the top of the screen, it takes you to a page where you can choose how to find what you’re looking for. You can search by Type… beef, chicken, side dish, dessert, etc. Or you can search by Source… Chewin’ the News, Winning Contest Entries, etc. All the recipes are cross-referenced under both headings, so you can find it using either one.

Our Crazy Cook for October is Lori S. from Coon Rapids, Minnesota. Lori’s story hit home because I’ve been testing apple and pumpkin recipes this week and Jenna and I have a “date” this afternoon for a lesson in pie crust making. Lord, give me patience Here’s Lori’s story:

A number of years ago (I won't say how many) when I was just learning to cook at home, I asked my mother if I could make some pumpkin bread. She was excited about my enthusiasm for cooking so she willingly gave me the go ahead. I followed the recipe that I had copied from a cookbook and put the two loaf pans in the oven to bake. About 30 minutes later I checked my masterpiece only to discover that they were still very runny. I looked over the recipe to see if I had forgotten anything - nothing seemed all that unusual except for one thing. My mother was working outside on the the yard when I walked up to her and asked, "Mom, isn't bread supposed to have flour in it???" The look on her face was enough to tell me that it should. Together we looked over the recipe and discovered that instead of writing down 4 cups of flour, I had mistakenly written 4 cups of water. Needless to say the pumpkin bread, or more appropriately, soup, didn't turn out. Mom was always a good sport however, and didn't banish me from the kitchen. It is because of her that I love to cook and bake today. My family loves to help out in the kitchen too and I always try to remain as positive with them as my mother was with me. My mother had the gift of patience I believe. Who knows, maybe I will instill the love of cooking into their hearts as well.

"DO A GOOD COOKING DEED" $25 WINNERS

Our October “Do a Good Cooking Deed” award goes to 5 awesome young men who live in England. They were nominated by Nicola, an employee of the home where they live and an avid 30 Day Gourmet cook. I’m doubling the award this month since it will be split 5 ways. Great job, boys! Here’s the story that Nicola told me recently by e-mail.

I’d like to nominate the Kids in a Children’s home that I am associated with for your “Do a Good Cooking Deed” contest.

First, let me set the scene a little:

These kids are not living with their parents either because their parents abused them – so they were taken away or because their parents couldn’t handle them, and they are in a children’s home rather than foster care because after a number of foster care providers tried, they proved too much to handle!

We have five boys - all teenagers. They all display “challenging” behavior (in other words they are difficult – complete nightmares!) and a couple have mild ADHD!

Anyway about a month ago when they went back to school it was approaching Harvest festival time, we had a house meeting and one of the boys wanted to do something for the old people in the area for the harvest festival, but he wanted to do something different from just buying a few tins of food. One of the other boys suggested that they all cooked a few cakes, and then one bright spark suggested that they make some food to put in the freezer – as he had heard me mention that I do. He told the others that it would be a great idea as we have three freezers, and I am always saying how much money I save with freezer cooking! Everyone thought this was a splendid idea! I agreed thinking that once we started planning the cooking out and worked out how much it would cost their enthusiasm would soon disappear...

October Recipe of the Month – Garlic Toast

Our Recipe of the Month winner is Angel Sweezea, from Michigan. Angel’s recipe for Garlic Toast is a tasty and economical alternative to the expensive garlic toast you buy from the freezer at your local grocery store. It’s quick and easy to make too!

The recipe has Italian seasoning in it, which is different from your “normal” garlic bread. I bought a bottle of Italian seasoning in the spice section of the grocery store. It is a mix of herbs… marjoram, thyme, rosemary, savory, sage, oregano and basil. It adds nice color and flavor to the garlic bread.

The recipe easily mixes up by hand, and is very easy to spread on the bread slices. The amount of spread the recipe makes was perfect for me! I got a nice medium coating on both sides of the bread, and didn’t have any leftovers. I used it all. And don’t do what I did! I knew I had garlic powder in my spice basket, but I didn’t think the look at the amount I needed and compare that to how much I had. The standard spice bottle is about 4” tall, and 1/4 C. of spice will use 1/3 to 1/2 of that bottle. Thankfully, I just had enough and didn’t have to run to the store for more!

My husband and I both liked this recipe. 7 year old Gabe’s first comment was “Is it supposed to be green?” because of the Italian seasonings. He quickly decided he liked it better than the kind I usually make, which is the brand name frozen from the grocery store. Gideon and Savannah both liked it too. He liked the crunchy outside and she liked the soft inside. Savannah, who is 9 1/2, said it “ tastes awkward when you first eat it.” which I thought was an interesting comment! When I asked her to explain, she said it just tasted different than she expected it to when she took her first couple of bites. Not different in a bad way, but her tongue had to get used to the flavor from the Italian seasoning.

We like Parmesan cheese at my house, so I didn’t add it when I made this recipe. Everyone would eat it just because of the Parmesan, and I wanted their opinions not to be influenced by that. But I will probably add the Parmesan next time I make it. I will also add more garlic powder next time. We like garlic… I always sprinkle garlic powder on the garlic bread I buy from the store before I put it in the oven for a stronger garlic flavor.

Overall, this is a great recipe! Very flavorful, easy to make, and adjustable for your family’s taste. As well as saving you money over buying frozen pre-made garlic toast. Can’t beat that!

I am a stay at-home, home schooling mom of 3 kids, ages 6,7 and 8. I have been doing once-a-month cooking ever since I got married 11 years ago. When I found 30 Day Gourmet I was so excited. I love the variety of recipes and the worksheets make planning so easy! I like being able to add my own recipes, especially because I am always experimenting in the kitchen. My hobbies are cooking-of course, stamping, knitting and I am learning to spin wool into yarn. My cooking days are usually a whole weekend when I try to do enough meals to last at least 3-4 months. I also do mini-cooking days to keep stocked up on lunches and snacks. I like being able to entertain, or have a meal for someone at a moments notice. It leaves time to enjoy all the other great things in life!
