South Sea Pineapple Chicken

Pineapple tidbits;

drained and reserved

Pea pods; frozen

Assembly Directions:
Brown chicken in skillet or oven with oil.
 

1. Arrange chicken pieces in 9x13 casserole. In medium saucepan, heat reserved pineapple juice, chicken broth, soy sauce, lemon juice and cornstarch. Stir constantly until mixture is smooth and thick. Pour sauce over chicken. Top with pineapple tidbits, pea pods and green onions.
OR  
2. Cool chicken pieces. In medium saucepan, heat reserved pineapple juice, chicken broth, soy sauce, lemon juice and cornstarch. Stir constantly until mixture is smooth and thick. Cool sauce. Add pineapple tidbits, pea pods and green onions.

 
Freezing Directions:

1. Cover with Saran wrap. Put 9x13 casserole into 2 gallon freezer bag. Label and freeze. Thaw. Bake at 350 degrees for 35-40 minutes. OR Bake frozen casserole at 350 degrees for 55-70 minutes.
OR  
2. Freeze chicken separately in 1-gallon freezer bag or rigid container. Freeze sauce with fruit and veggies in freezer bag. Label and freeze with chicken.
Thaw. Arrange chicken in 9x13 casserole. Pour sauce, fruit, veggie mix over all. Bake at 350 degrees for 35-40 minutes.
