Molly’s Back-to-School Plan

50 meals, lots of lunches

I go back to work as a high school guidance counselor on Monday, August 19th...and had to get that freezer filled up first! I spent just over $250.00 and here's what's in my freezer:

  • Souperior Meatloaf - 6 one pound loaves (6 meals)
  • Burger Bean Bake - 5 meals
  • Ham Quiche - 4 quiches - 4 dinners + 4 lunches the next day
  • Cheeseburger Quiche - 3 quiches - 3 dinners + 3 lunches the next day
  • Mushroom Beef - 4 meals
  • Savory Meat Base - 4 batches to be turned into sloppy joes, spaghetti sauce, etc.
  • 2 lbs. browned ground beef
  • Chicken in a Pot - 4 meals
  • Super Easy Chicken Manicotti - 4 meals
  • Mom's Chicken Noodle Casserole - 4 meals
  • Parsley Parmesan Chicken - 6 meals
  • Chicken Enchiladas - 3 meals
  • Twice Baked Potatoes - 14 halves: Garlic; 26 halves: Cheesy

I have the fixin's for one batch of Cheese-filled shells (4 meals for DH & me) and Pasta Crab Casserole (4 meals) but the freezer is full! What a dilemma! Guess I'll have to rearrange stuff and try to make room.

I cook by myself, and this has taken me four days, but it's worth it. With a pizza or take out Chinese every once in awhile, and me actually cooking dinner from scratch a few times, these meals will get us through the rest of August, September, October and probably into November. Grocery shopping will be limited to picking up milk, eggs, fresh fruit and veggies...the "go-withs." And if I replenish the freezer one recipe at a time, each weekend, it will stay full the entire school year.

I LOOOOOOOOVE 30 Day Gourmet!

Missy’s Back-To-School Italian Day

30 Meals, lots of extras – CAIO, BABY!

Got energetic, I don’t know why, and did an Italian day today. I ended up with the following.

  • 8 bags of Pizza Sauce
  • 6 pans of Lasagna
  • 8 large pans of stuffed shells (30 day gourmet)
  • 4 small pans stuffed shells
  • 3 Dorothy's Butterscotch rolls (30dg)
  • 1 vanilla pudding
  • 1 baked chicken
  • 1 bag chicken in gravy left over
  • Alfredo
  • 2 large Bowtie Lasagna
  • 4 small bow tie lasagna (no recipe, just had extra stuffing from the shells and sauce so cooked bow tie's and mixed it all together)
  • 1 bag of spaghetti sauce
  • Second bag of spaghetti sauce poured all over the cabinets and floor.
  • And last but not least, a wonderful dh who helped me and is right now cleaning the kitchen.

The chicken and alfredo was dinner. I hate making dinner when I am cooking. Ugh.

Susie’s First Full Cooking Day

32 Main Entrees + Salad and Pie

Susie from San Angelo, Texas

I've been dabbling in these recipes for a year and finally decided to go all out and dedicate a day to it! I actually spread it out over 2 days and my hubby helped on the 2nd day (all those smells were tempting him) I put the meals away in servings for two and ended up with:

  • 4 meals of chicken in a pot
  • 5 meals of the pork chop casserole
  • 3 meals of chicken broccoli fettucine (plus one we ate that night)
  • 5 meals of jammin' chicken
  • 1 chicken cordon bleu roll (that'll easily feed us 2 times, maybe 3)
  • 1 meal of parmesan steak
  • 4 meals of economical steak casserole
  • 4 meals of lemon italian chicken
  • 4 meals of bacon wrapped chicken
  • 1 pan of the delicious chicken cordon bleu lasagna that we ate for 2 nights plus a small pan to put away
  • 2 tubs of seafoam salad and even made
  • 3 dreamsicle pies while on a "General Hospital" break

Whew! I'm looking forward to this month of eating--my hubby loves it when I pull one of these out of the freezer--he has it ready when I come home from pm work. Keep up the good tips!

My hubby and I are empty nesters with our son and his wife far away in Alabama. I work 12 hr shifts as a ward clerk and telemetry monitor tech on a cardiac floor in a local hospital while my other half is retired Army and now is a K-12 librarian in a small school district 45 minutes away. When we get home neither one of us has the energy to cook so these recipes have saved us all sorts of time and money. I make one or two on my days off---we'll have one for dinner then I'll freeze the rest. My goal is to get a partner and devote a whole day to this and really stock up the freezer!

15 Day Cook Lori Takes the Plunge!

30 Main Entrees, 6 Sides & 4 Desserts

I just wanted to take the time to say You can do it!!

I was a 15 DAY cook and I was given the 30 Day Freezer cooking manual by 30 Day Gourmet and it was all it took set me over the edge to the 30 day mom!
We have 3 children, Home School and are active in our church so monthly cooking was a neat way to save ME some time. I did not have a cooking partner, I wanted to try for myself first. I shopped on Friday night and on Saturday I awoke at 6am to put my chicken in the oven and that was all I wrote. I was able to make 30 main dishes, 6sides and 4 desserts. I finished at 4p.m. and my husband was home to help me clean up the last of my work-He Was SOOO impressed~

My mom had come and rescued the kids but I had rented movies and picked up frozen lunches so they would of been fine and I did include them in cooking desserts.

I will say it is so neat to look in the freezer and not have to plan what we are going to eat.

Have Fun and you will be successful.
