Assembly
Directions:
In a saucepan, combine filling ingredients. Cook and
stir over medium heat until thickened. Set aside to
cool.
In a mixing bowl, cream butter and sugars. Add eggs,
vanilla and salt. Beat well. Add flour and mix well.
Shape dough into balls. With your thumb, press an
indention into the middle of the cookie. Fill
indention with filling mixture.
Place cookies on sprayed cookie sheet. Bake at 350
degrees for 10-12 minutes or until lightly browned.
Cool.
Freezing Directions:
Cool cookies. Wrap individually and place in freezer
bags for a quick snack.
Comments:
*Apple equivalents: Large apple = 2 C. chopped, Medium
apple = 1 1/2 C. chopped, Small apple = 3/4 C. chopped
