Assembly Directions:
Sauté the onion and green pepper in a small amount of butter or margarine or with cooking spray in a large skillet. Add the tomatoes, mustard, Worcestershire sauce, sugar, chili sauce and ketchup to the skillet. Stir to mix well and simmer until the mixture thickens. Set aside to cool. Meanwhile, cook the sausage. If it’s not already cut into pieces, cut to fit the length of the buns you bought. This sausage releases a lot of grease as it cooks. The least messy way to cook it is to grill it. And you have the bonus of the extra flavor grilling gives it. You can also boil it. Put the pieces in a saucepan with 2 1/2 C. of water, and simmer it until most of the water is gone. I poke the sausage as it cooks, with a knife or a fork, to release more of the grease. When the sausage is cooked, put it on paper towels to drain and cool. Keep the buns on hand.


Freezing Directions:
Put cooled sausage in a 1 gallon freezer bag or rigid container. Pour cooled sauce in on top of the sausage. Seal, label and freeze.


Serving Directions:
Thaw bag overnight in the refrigerator. Spray your crock pot with cooking spray. Dump the sausage and sauce into the crock pot. Cook on low until heated through; 2 to 3 hours. To serve, put some of the sauce on the bun, put a sausage on the bun. Top with more sauce and some onion and pepper chunks. Enjoy!!


Comments:
This recipe is just like the Hot Sausage Sandwiches you get at the county fair! Buy the sausage from the fresh meat counter at your local grocery store. The size buns you need are the next size bigger than hot dog buns… same shape, but bigger. Add more or less peppers and onions based on your preference.
