Containers:  2-9" round pans/dishes or 9x13 pan or freezer bags

Assembly Directions:

Cook and dice chicken or turkey if using diced poultry. Cook rice 3/4 the recommended time. Cook broccoli according to package directions.  Set aside. Mix lemon juice and mayonnaise, then add chicken flavored white sauce or soup. Spread rice in container.  Layer on broccoli, then half the sauce, then the chicken, then remaining sauce.  Top with grated cheese.

Freezing and Cooking Directions:

Wrap tightly with freezer paper, foil, or 2-gallon freezer bag.  Seal, label and freeze.

To serve, thaw and bake at 350º for 30 minutes or until chicken is tender and easily pierced with a fork.

Comments:

We don’t recommend pre-cooking this on Assembly Day since it bakes so quickly.

If using chopped poultry, you can mix all the ingredients together except the cheese. Freeze rice, chicken, broccoli, and sauce in one bag and cheese topping in another. When ready to serve, thaw then pour into casserole. Top with cheese and bake.
