Tammy: This recipe is just like what Grandma used to make! The SACO Buttermilk Blend is powdered buttermilk. It’s in the baking aisle of my local grocery, in a 12 oz. round cardboard can, near the powdered and canned milk. I got this recipe from SACO foods website, at www.sacofoods.com. I modified the directions to work for freezer cooking. It’s quick and easy, and makes light biscuits!

Assembly Directions:
In a large mixing bowl, sift together the flour, Buttermilk Blend, baking powder, sugar, salt and baking soda. Use a pastry blender to cut the shortening into the sifted ingredients thoroughly, until the mixture resembles the texture of corn meal.

Freezing Directions:
Put each recipe of biscuit mix in a freezer bag. Each recipe equals 3 C. of mix. Seal, label and freeze.

Serving Directions:
Remove the bag of biscuit mix from the freezer, and allow it to come to room temperature. Dump the mix into a large bowl. Add the water and mix until dough is mostly combined. Do not over mix. Lightly flour the counter, and turn the dough out onto the counter. Lightly knead it 20 to 25 times. Roll or pat the dough to a half-inch thickness. Cut with a floured biscuit cutter. Place close together on an un-greased cookie sheet. Bake for 10-12 minutes at 450 degrees.
